- Local cuisine of Shonai in Yamagata prefecture that uses a giant cod of 7-10kg eaten whole. Flavor is extracted from the liver boiled in miso and after a little bit, the fish is added. Finally, the shirako (male eggs) are added and the flavor is adjusted. It can be eaten as is, but if you want to taste the authentic taste, do not forget to put on the iwa nori topping that is common practice in Shonai. "Cod stew" can be eaten throughout the year, but because cod is particularly delicious in winter when it is nearly spawning season, "kandara" or "cold cod" is what people in Shonai really look forward to in the winter.

Yonezawa beef is a Japanese black which is said to be the three major Japanese Wagyu in Japan along with Matsuzaka beef and Kobe beef in Yonezawa City. It is use to make Yonezawa beef sukiyaki with other ingredients such as green onion, Chinese cabbage, grilled tofu and etc.
Fermented Bean Soup
Long time ago, people in Yamagata did not have the opportunities to consume proteins. Therefore, they now use Natto soup as a replacement. Natto soup contains ingredient such as soybean products, sweet potatoes and green onion which makes it a healthy food.
- "Board Soba" features a lot of soba placed on a long board, and many people gather around and eat from it. In Murayama City and Oishiwada Town with severe weather even for Yamagata, the soba that they ate instead of rice is very firm and chewy. It also has a lot of starch and a strong umami. That is because this mountainous area is the best place for cultivating soba due to its severe difference in temperature. Long ago, after the villagers' farming work, there was a custom of serving soba and handmade soba was a way of celebrating the end of labor.

- A local taste that has been popular for about 40 years in the Shinjo area. Originally there were many farmers breeding chickens in this district, ant there was a custom that eating chicken innards stew was for celebrations. Because of that, "innards stew" was a classic dish of a drinking establishments, but it is said that the customer began eating ramen with innards and a chicken-soy sauce stock as a way of closing their meal. The simmered chicken innards and the soy sauce soup create the perfect balance. About ten shops currently offer it areas such as Shinjo City and Mogami Town. The catchphrase is "Love and Chicken Innards ramen".
